Went to buy all ingredients and get all baking stuff ready to start!
Ingredients
Base:
160g Digestive biscuit (finely crushed)
80g Unsalted butter (melted)
Filling:
(1)
625g Cream cheese
170g Sugar

40g Plain flour
(3)
4 Egg yolk
2 1/2 Egg white
1 Tbsp lemon juice
1 lemon zest
(4)
200g whipping cream
(5)
1 1/2 Egg white
20g Sugar
Method
Base:
- Mix all the ingredients until well-blended.
- Press it into a 10-inch springform pan and refrigerate for 15 minutes or until firm.
Filling:
- Wrap the outside of the springform base with aluminium foil to prevent water doesn't seep in.
- Cream (1) until light. Add in (2) mix until well-blended.
- Add in (3), cream until smooth and light.
- Add in (4), mix until well-combined.
- Whisk (5) to a soft peak. Add it into cheese mixture and mix until well incorporated.
- Pour cheese mixture over the prepared biscuit base.
- Base in water bath at 160c for 75 mins or until golden brown
- Allow to cool, keep refrigerated overnight.
Note
Cutting cheesecake:
Use hot water/over a fire to heat up your knife. Wipe it clean before cutting the cheesecake. Wipe the knife clean after every cut and repeat until the whole cake is cut.
